I don’t know about you but when I get hungry, I get hungry fast. I find myself rummaging through cupboards and the refrigerator looking for anything to grab and eat. Especially now that I’m breastfeeding my blood sugar drops quickly and I start shaking and it’s not good for me or anyone around me. So I’ve come up with a super quick and easy no bake energy bite recipe. These are great to have on a busy day in between meals and you probably have most of the ingredients at home already.
No Bake Energy Bites
1 cup peanut butter (smooth or chunky)
2/3 cup honey
2 tsp vanilla extract
2 cups old-fashioned oats (raw)
2/3 cup toasted, sweetened shredded coconut
2/3 cup ground golden flaxseed meal (I use Bob’s Red Mill)
½ dried cranberries and/or mini chocolate chips
Combine all ingredients in a mixing bowl. Place combined ingredients in the refrigerator for 2 hours or until chilled.
Remove from refrigerator and shape into 1-inch balls. Store in refrigerator in an airtight container.
